Instructions
- Preheat the waffle iron according to the manufacturer’s instructions.
- In a large bowl, mix together the flour, Parmesan cheese, baking powder, and salt.
- In another bowl, whisk the eggs, then add the milk and melted butter, mixing well.
- Combine the wet ingredients with the dry ingredients, stirring until just mixed.
- Pour the batter into the waffle iron and cook until the waffles are golden brown.
- For the mousse, combine ricotta cheese, chopped basil, olive oil, and black pepper in a bowl and mix until smooth.
- Spread the basil ricotta mousse between two waffles to create a sandwich.

- For a more intense flavor, let the basil ricotta mousse chill in the fridge for an hour before using.
