A delightful twist on classic tiramisu with the rich flavor of pistachios.

Ingredients

  • 1 cup shelled pistachios
  • 1 cup heavy cream
  • 1 cup mascarpone cheese
  • 1 cup brewed coffee, cooled
  • 1/2 cup sugar
  • 1 teaspoon vanilla extract
  • 2 tablespoons unsweetened cocoa powder
  • 24 ladyfinger cookies

Instructions

  1. Blend the pistachios until fine and set aside.
  2. In a bowl, whip the heavy cream until stiff peaks form.
  3. In another bowl, combine mascarpone, sugar, vanilla, and the blended pistachios.
  4. Fold the whipped cream into the mascarpone mixture.
  5. Dip ladyfingers into the brewed coffee and layer them in a dish.
  6. Spread a layer of the pistachio mixture over the cookies.
  7. Repeat layers until ingredients are used up.
  8. Chill for at least 4 hours before serving.
  9. Dust with cocoa powder before serving.

Notes

  • For a stronger pistachio flavor, use pistachio extract in addition to the nuts.
  • This dessert can be made a day in advance for better flavor integration.
