  • 1/2 cup butter, softened
  • 2 eggs
  • 1 teaspoon vanilla extract
  • 1 1/2 cups all-purpose flour
  • 1 teaspoon baking powder
  • 1/2 teaspoon baking soda
  • 1/4 teaspoon salt
  • 1/2 cup sour cream
  • 2 cups fresh peaches, sliced

Instructions

  1. Preheat the oven to 350°F (175°C).
  2. In a large bowl, cream together the brown sugar and butter until smooth.
  3. Beat in the eggs one at a time, then stir in the vanilla.
  4. Combine the flour, baking powder, baking soda, and salt; gradually stir into the creamed mixture.
  5. Mix in the sour cream until just combined.
  6. Fold in the peaches.
  7. Pour batter into a greased cake pan.
  8. Bake for 40-45 minutes or until a toothpick inserted into the center comes out clean.
  9. Let cool before serving.

Notes

  • For best results, use ripe peaches.
  • This cake is excellent served with whipped cream.
