These no-bake energy balls are packed with superfoods and are perfect for a quick snack or post-workout boost.

Ingredients

  • 1 cup almond flour
  • 1/2 cup almond butter
  • 1/4 cup maple syrup
  • 2 tablespoons blue spirulina powder
  • 1/4 cup shredded coconut
  • 1/4 cup chia seeds
  • 1 teaspoon vanilla extract
  • 1/4 cup cocoa nibs (optional)

Instructions

  1. In a mixing bowl, combine almond flour, almond butter, maple syrup, blue spirulina, shredded coconut, chia seeds, and vanilla extract.
  2. Mix until well combined and a dough forms.
  3. If using, fold in cocoa nibs.
  4. Using your hands, roll the mixture into bite-sized balls.
  5. Place the energy balls on a baking sheet lined with parchment paper.
  6. Chill in the refrigerator for 30 minutes to set.
  7. Enjoy immediately or store in an airtight container in the fridge.
