Ingredients

  • 2 medium zucchinis
  • 1 sheet of puff pastry
  • 1 cup goat cheese, crumbled
  • 2 large eggs
  • 1/2 cup heavy cream
  • 2 tablespoons fresh basil, chopped
  • 1 clove garlic, minced
  • Salt to taste
  • Pepper to taste

Instructions

  1. Preheat the oven to 400°F (200°C).
  2. Roll out the puff pastry and place it in a tart pan, trimming the edges.
  3. Slice the zucchinis thinly and layer them on the pastry.
  4. In a bowl, whisk together the eggs, cream, garlic, basil, salt, and pepper.
  5. Pour the egg mixture over the zucchini and sprinkle with goat cheese.
  6. Bake for 30-35 minutes or until the tart is golden and set.
  7. Let it cool slightly before slicing and serving.
