  • 4 large hot dog buns
  • 1 tablespoon olive oil
  • 1 medium onion, finely diced
  • 1 bell pepper (any color), chopped
  • 2 cloves garlic, minced
  • 1 teaspoon smoked paprika
  • 1 teaspoon ground cumin
  • 1 teaspoon ground coriander
  • 1/2 teaspoon cayenne pepper (adjust for spice preference)
  • Salt and black pepper to taste
  • 1 cup shredded iceberg lettuce
  • 1 medium tomato, chopped
  • 1/2 cup Greek yogurt
  • 1 tablespoon lime juice
  • 1 tablespoon chopped fresh parsley (optional)

Instructions

  1. Preheat your grill or a skillet over medium-high heat. If using boerewors, shape it into a spiral and secure with toothpicks; if using Italian sausage, keep them whole.
  2. Grill or pan-fry the boerewors or sausages for approximately 10-15 minutes, turning them frequently until they are cooked through and nicely browned. Once done, remove them from the heat and allow them to rest.
  3. In another skillet, heat the olive oil over medium heat. Add the diced onion and chopped bell pepper, cooking until they soften, which should take about 5 minutes.
  4. Incorporate the minced garlic, smoked paprika, cumin, coriander, cayenne pepper, salt, and black pepper. Sauté for an additional 2 minutes until the mixture is aromatic.
  5. In a small bowl, combine the Greek yogurt with lime juice and parsley (if using) to create a refreshing dressing.
  6. Slice the hot dog buns open and toast them lightly on the grill or in a toaster until golden.
  7. To assemble, place a piece of boerewors or sausage into each bun, generously top with the sautéed onion and pepper blend, add a handful of shredded lettuce, sprinkle with diced tomato, and finish with a drizzle of the yogurt dressing.
  8. Enjoy immediately while hot.
