- 1 pound boerewors (or Italian sausage as an alternative)
- 4 large hot dog buns
- 1 tablespoon olive oil
- 1 medium onion, finely diced
- 1 bell pepper (any color), chopped
- 2 cloves garlic, minced
- 1 teaspoon smoked paprika
- 1 teaspoon ground cumin
- 1 teaspoon ground coriander
- 1/2 teaspoon cayenne pepper (adjust for spice preference)
- Salt and black pepper to taste
- 1 cup shredded iceberg lettuce
- 1 medium tomato, chopped
- 1/2 cup Greek yogurt
- 1 tablespoon lime juice
- 1 tablespoon chopped fresh parsley (optional)
Instructions
- Preheat your grill or a skillet over medium-high heat. If using boerewors, shape it into a spiral and secure with toothpicks; if using Italian sausage, keep them whole.
- Grill or pan-fry the boerewors or sausages for approximately 10-15 minutes, turning them frequently until they are cooked through and nicely browned. Once done, remove them from the heat and allow them to rest.
- In another skillet, heat the olive oil over medium heat. Add the diced onion and chopped bell pepper, cooking until they soften, which should take about 5 minutes.
- Incorporate the minced garlic, smoked paprika, cumin, coriander, cayenne pepper, salt, and black pepper. Sauté for an additional 2 minutes until the mixture is aromatic.
- In a small bowl, combine the Greek yogurt with lime juice and parsley (if using) to create a refreshing dressing.
- Slice the hot dog buns open and toast them lightly on the grill or in a toaster until golden.
- To assemble, place a piece of boerewors or sausage into each bun, generously top with the sautéed onion and pepper blend, add a handful of shredded lettuce, sprinkle with diced tomato, and finish with a drizzle of the yogurt dressing.
- Enjoy immediately while hot.
Notes
- Adjust the cayenne pepper according to your spice preference.
- Fresh parsley is optional but adds a nice touch to the dressing.
