  • 2 cups chopped ripe mango (approximately 2 medium mangoes)
  • 1 cup chopped fresh pineapple (about 1 small pineapple)
  • 1 cup chopped tart apple (around 1 medium apple)
  • 1 cup finely chopped onion (about 1 medium onion)
  • 1 cup packed brown sugar
  • 1 cup apple cider vinegar
  • 1 tablespoon freshly grated ginger
  • 1 teaspoon ground cinnamon
  • 1/2 teaspoon ground cloves
  • 1/2 teaspoon sea salt
  • 1/4 teaspoon freshly ground black pepper
  • 1/4 teaspoon crushed red pepper flakes (optional for a spicy kick)

Instructions

  1. Place the chopped mango, pineapple, apple, and onion into a sizable pot.
  2. Pour in the brown sugar and apple cider vinegar, then add the grated ginger, cinnamon, cloves, salt, black pepper, and red pepper flakes if desired.
  3. Mix everything thoroughly to ensure an even distribution of flavors.
  4. Heat the pot over medium-high heat until the mixture reaches a rolling boil.
  5. Once boiling, lower the heat to a gentle simmer.
  6. Allow it to cook uncovered for about 30 to 40 minutes, stirring occasionally, until the mixture thickens and the fruits become tender.
  7. After cooking, take the pot off the heat and let the relish cool down to room temperature.
  8. Once cooled, carefully spoon the relish into clean, sterilized jars and seal them tightly.
  9. For the best flavor, refrigerate the jars for at least 24 hours before enjoying.

  • To enhance the heat, feel free to add more red pepper flakes or include a chopped jalapeño during the cooking process.
