Ingredients

  • 2 tablespoons maple syrup

Instructions

  1. In a bowl, combine chia seeds, almond milk, maple syrup, lemon zest, lemon juice, and vanilla extract. Stir well to combine.
  2. Let the mixture sit for 5-10 minutes, stirring occasionally, until the chia seeds expand and the mixture thickens.
  3. In a separate bowl, whip the coconut cream until smooth.
  4. Add the chia mixture to the coconut cream and mix until fully combined.
  5. Refrigerate the pudding for at least 2 hours or overnight to set.
  6. Serve chilled, garnished with additional lemon zest or fresh berries, if desired.
