Instructions
- In a bowl, combine chia seeds, almond milk, maple syrup, lemon zest, lemon juice, and vanilla extract. Stir well to combine.
- Let the mixture sit for 5-10 minutes, stirring occasionally, until the chia seeds expand and the mixture thickens.
- In a separate bowl, whip the coconut cream until smooth.
- Add the chia mixture to the coconut cream and mix until fully combined.
- Refrigerate the pudding for at least 2 hours or overnight to set.
- Serve chilled, garnished with additional lemon zest or fresh berries, if desired.
Notes
- This pudding can be made ahead of time, and it keeps well in the refrigerator for several days.
- Feel free to adjust the sweetness by adding more or less maple syrup according to your taste.
