Instructions
- In a bowl, mix together the chia seeds and almond milk until well combined.
- Add the maple syrup, fresh lemon juice, vanilla extract, and lemon zest. Stir well.
- Let the mixture sit for 5 minutes, then stir again to prevent clumping.
- Cover the bowl and refrigerate for at least 4 hours or overnight.
- Once set, give it a good stir before serving. Enjoy!

- For a thicker pudding, add more chia seeds.
- Can be served with fresh fruits on top.
