- 1 wild boar crown roast
- 4 tablespoons unsalted butter, softened
- 2 teaspoons fresh rosemary, chopped
- 2 teaspoons fresh thyme, chopped
- 2 teaspoons fresh parsley, chopped
- 4 cloves garlic, minced
- Salt to taste
- Pepper to taste
Instructions
- Preheat the oven to 350°F (175°C).
- In a bowl, mix the softened butter with chopped herbs and garlic.
- Rub the herb butter all over the crown roast, making sure to get it into all crevices.
- Season with salt and pepper.
- Place the roast in a roasting pan and cook for about 2 to 2.5 hours, or until the internal temperature reaches 145°F (63°C).
- Let the roast rest for 15 minutes before slicing and serving.

- Make sure to let the roast rest to retain juices.
- This dish pairs well with roasted vegetables and a red wine.
