This White Chocolate, Raspberry & Pistachio Tiramisu is a delightful twist on the classic Italian dessert, featuring layers of creamy white chocolate mascarpone, tart raspberries, and crunchy pistachios.

Ingredients

  • 1 cup heavy cream
  • 8 ounces mascarpone cheese
  • 1/2 cup powdered sugar
  • 1 teaspoon vanilla extract
  • 1 cup fresh raspberries
  • 1/2 cup white chocolate, melted
  • 1/2 cup pistachios, chopped
  • 1 cup brewed coffee
  • 1/2 cup coffee liqueur (optional)
  • 30 ladyfingers

Instructions

  1. In a large bowl, whip the heavy cream until soft peaks form. Add mascarpone, powdered sugar, and vanilla extract, then mix until smooth.
  2. Gently fold in melted white chocolate until well combined.
  3. In a separate bowl, mix brewed coffee and coffee liqueur.
  4. Dip each ladyfinger into the coffee mixture for a few seconds, then layer them in the bottom of a serving dish.
  5. Spread half of the mascarpone mixture over the ladyfingers, then sprinkle half of the raspberries and pistachios on top.
  6. Repeat the layers with the remaining ingredients.
  7. Chill in the refrigerator for at least 4 hours or overnight before serving.

Notes

  • For a non-alcoholic version, omit the coffee liqueur.
  • Letting the tiramisu rest overnight enhances the flavors.
