Instructions
- Preheat your oven to 400°F (200°C).
- In a mixing bowl, blend the crumbled feta and cream cheese together until smooth.
- Gradually incorporate 2 tablespoons of olive oil, garlic powder, and black pepper, mixing until creamy.
- Adjust the seasoning with salt if desired.
- Spoon the whipped feta into a serving dish and set aside.
- On a separate baking tray, drizzle the cherry tomatoes with the remaining olive oil and balsamic glaze, ensuring they are evenly coated.
- Spread the tomatoes out in a single layer and roast in the oven for about 15-20 minutes, or until blistered and slightly caramelized.
- Once done, allow the tomatoes to cool for a few minutes.
- Top the whipped feta with the warm roasted tomatoes and finish with fresh basil leaves.
- Serve immediately with pita chips, crusty bread, or fresh veggies for dipping.
