  • Fresh basil leaves for decoration

Instructions

  1. Preheat your oven to 400°F (200°C).
  2. In a mixing bowl, blend the crumbled feta and cream cheese together until smooth.
  3. Gradually incorporate 2 tablespoons of olive oil, garlic powder, and black pepper, mixing until creamy.
  4. Adjust the seasoning with salt if desired.
  5. Spoon the whipped feta into a serving dish and set aside.
  6. On a separate baking tray, drizzle the cherry tomatoes with the remaining olive oil and balsamic glaze, ensuring they are evenly coated.
  7. Spread the tomatoes out in a single layer and roast in the oven for about 15-20 minutes, or until blistered and slightly caramelized.
  8. Once done, allow the tomatoes to cool for a few minutes.
  9. Top the whipped feta with the warm roasted tomatoes and finish with fresh basil leaves.
  10. Serve immediately with pita chips, crusty bread, or fresh veggies for dipping.
