A flavorful and spicy beef noodle soup that is perfect for any occasion.

Ingredients

  • 1 lb beef brisket
  • 1 lb beef bones
  • 6 cups beef broth
  • 1 onion, halved
  • 4 cloves garlic
  • 2 inches ginger, sliced
  • 2 star anise
  • 1 cinnamon stick
  • 3 tablespoons fish sauce
  • 1 tablespoon sugar
  • 8 oz rice noodles
  • 2 green onions, chopped
  • 1 jalapeño, sliced
  • 1 lime, cut into wedges
  • fresh herbs (basil, cilantro) to garnish

Instructions

  1. In a large pot, add beef bones and brisket, cover with water, and bring to a boil. Skim foam off the surface.
  2. Add onion, garlic, ginger, star anise, cinnamon, broth, fish sauce, and sugar. Simmer for 3 hours.
  3. Remove meat and strain the broth. Return the broth to heat.
  4. Cook rice noodles according to package instructions. Drain and set aside.
  5. Slice the beef brisket thinly.
  6. In bowls, add noodles and top with beef slices. Pour hot broth over the top.
  7. Garnish with green onions, jalapeño, lime wedges, and fresh herbs.

Notes

  • For extra spice, add more jalapeños or chili paste.
  • Serve with your favorite sides for a complete meal.
