Ingredients

- 1 lb beef brisket
- 1 lb beef bones
- 6 cups beef broth
- 1 onion, halved
- 4 cloves garlic
- 2 inches ginger, sliced
- 2 star anise
- 1 cinnamon stick
- 3 tablespoons fish sauce
- 1 tablespoon sugar
- 8 oz rice noodles
- 2 green onions, chopped
- 1 jalapeño, sliced
- 1 lime, cut into wedges
- fresh herbs (basil, cilantro) to garnish
Instructions
- In a large pot, add beef bones and brisket, cover with water, and bring to a boil. Skim foam off the surface.
- Add onion, garlic, ginger, star anise, cinnamon, broth, fish sauce, and sugar. Simmer for 3 hours.
- Remove meat and strain the broth. Return the broth to heat.
- Cook rice noodles according to package instructions. Drain and set aside.
- Slice the beef brisket thinly.
- In bowls, add noodles and top with beef slices. Pour hot broth over the top.
- Garnish with green onions, jalapeño, lime wedges, and fresh herbs.
Notes
- For extra spice, add more jalapeños or chili paste.
- Serve with your favorite sides for a complete meal.
