- 1/4 cup finely chopped green onions
- 1/4 cup chopped fresh cilantro

- 1 tablespoon fish sauce
- 1 teaspoon sugar
- 1/2 teaspoon black pepper
- 1/4 teaspoon salt
- 1 egg, beaten
- 1/2 cup breadcrumbs for coating
- Vegetable oil for frying
For the Dipping Sauce:
- 1/4 cup fish sauce
- 1/4 cup water
- 2 tablespoons sugar
- 1 tablespoon lime juice
- 1 clove minced garlic
- 1 small red chili, sliced (optional)
Instructions
- In a food processor, blend the fish fillets until they are finely chopped.
- Add the cooked rice, green onions, cilantro, mint, garlic, fish sauce, sugar, black pepper, salt, and the beaten egg. Pulse the mixture until it is well combined but retains some texture.
- Shape the mixture into small patties, approximately 2 inches wide, and coat each one in breadcrumbs to ensure a crispy exterior.
- In a large skillet, heat about 1/4 inch of vegetable oil over medium heat. Once the oil is shimmering, carefully place the fish patties in the skillet, making sure not to overcrowd them.
- Fry each patty for 3-4 minutes on each side until they achieve a golden-brown color and are cooked through. Once done, transfer them to a plate lined with paper towels to absorb any excess oil.
- For the dipping sauce, combine the fish sauce, water, sugar, lime juice, minced garlic, and sliced chili in a small bowl. Stir until the sugar is fully dissolved and the ingredients are well mixed.
- Serve the crispy fish patties warm, garnished with additional fresh herbs, alongside the flavorful dipping sauce for a delightful experience.
Notes
- For an extra spicy flavor, increase the amount of chili in the dipping sauce or mix in chopped jalapeños into the fish patty mixture.
- Feel free to swap the white fish for shrimp or a combination of seafood for a unique twist.
