A colorful and nutritious bread made with beets and spinach, ideal for healthy snacking.

Ingredients

  • 2 cups all-purpose flour
  • 1 cup cooked and pureed beets
  • 1 cup fresh spinach, chopped
  • 1/4 cup olive oil
  • 1/2 cup warm water
  • 1 tablespoon sugar
  • 1 teaspoon salt
  • 1 tablespoon active dry yeast

Instructions

  1. In a bowl, combine the warm water, sugar, and yeast. Let it sit for 5 minutes until frothy.
  2. In a large mixing bowl, combine the flour, salt, pureed beets, and chopped spinach.
  3. Add the yeast mixture and olive oil to the dry ingredients and mix until a dough forms.
  4. Knead the dough on a floured surface for about 10 minutes until smooth.
  5. Place the dough in a greased bowl, cover, and let it rise for 1 hour.
  6. Preheat the oven to 375°F (190°C).
  7. Punch down the risen dough and shape it into a loaf.
  8. Place the loaf in a greased bread pan and let it rise for an additional 30 minutes.
  9. Bake for 30-35 minutes until golden brown and the loaf sounds hollow when tapped.
  10. Let it cool before slicing.
