- 2 zucchini, thinly sliced
- 2 yellow squash, thinly sliced
- 2 tomatoes, thinly sliced
- 1 onion, sliced
- 2 cloves garlic, minced
- 3 tablespoons olive oil
- 1 teaspoon dried thyme
- Salt and pepper to taste
Instructions
- Preheat your oven to 375°F (190°C).
- In a baking dish, drizzle olive oil and add garlic and onion.
- Layer the sliced zucchini, yellow squash, and tomatoes in an overlapping pattern.
- Sprinkle thyme, salt, and pepper over the vegetables.
- Cover with foil and bake for 30 minutes.
- Remove the foil and bake for an additional 15-20 minutes until vegetables are tender.
- Serve warm.

- For added flavor, you can sprinkle cheese on top before the final baking.
