Ingredients

  • 2 zucchini, thinly sliced
  • 2 yellow squash, thinly sliced
  • 2 tomatoes, thinly sliced
  • 1 onion, sliced
  • 2 cloves garlic, minced
  • 3 tablespoons olive oil
  • 1 teaspoon dried thyme
  • Salt and pepper to taste

Instructions

  1. Preheat your oven to 375°F (190°C).
  2. In a baking dish, drizzle olive oil and add garlic and onion.
  3. Layer the sliced zucchini, yellow squash, and tomatoes in an overlapping pattern.
  4. Sprinkle thyme, salt, and pepper over the vegetables.
  5. Cover with foil and bake for 30 minutes.
  6. Remove the foil and bake for an additional 15-20 minutes until vegetables are tender.
  7. Serve warm.

  • For added flavor, you can sprinkle cheese on top before the final baking.
