- 1 cup pitted Medjool dates
- 1 cup raw pistachios
- 1/2 cup rolled oats
- 1/4 cup almond butter
- 1/4 cup protein powder
- 1/4 cup maple syrup
- 1 teaspoon vanilla extract
Instructions
- In a food processor, combine the pitted dates, pistachios, rolled oats, almond butter, protein powder, maple syrup, and vanilla extract.
- Process until the mixture is well combined and sticks together.
- Line a baking dish with parchment paper and press the mixture evenly into the bottom.
- Refrigerate for about 1 hour until firm.
- Once set, cut into bars and store in an airtight container.
Notes
- For a different flavor, try adding cocoa powder or different nuts.
- These bars can be stored in the refrigerator for up to a week.
