These Vegan Pistachio Protein Bars are a delicious and nutritious snack perfect for a quick energy boost or post-workout fuel.

Ingredients

  • 1 cup pitted Medjool dates
  • 1 cup raw pistachios
  • 1/2 cup rolled oats
  • 1/4 cup almond butter
  • 1/4 cup protein powder
  • 1/4 cup maple syrup
  • 1 teaspoon vanilla extract

Instructions

  1. In a food processor, combine the pitted dates, pistachios, rolled oats, almond butter, protein powder, maple syrup, and vanilla extract.
  2. Process until the mixture is well combined and sticks together.
  3. Line a baking dish with parchment paper and press the mixture evenly into the bottom.
  4. Refrigerate for about 1 hour until firm.
  5. Once set, cut into bars and store in an airtight container.
