Ingredients

  • 1 cup all-purpose flour
  • 1 cup granulated sugar
  • 1/3 cup unsweetened cocoa powder
  • 1 tsp baking powder
  • 1/2 tsp baking soda
  • 1/4 tsp salt
  • 1/3 cup vegetable oil
  • 1 tsp vanilla extract
  • 1 cup almond milk
  • 1 tbsp apple cider vinegar

Instructions

  1. Preheat the oven to 350°F (175°C) and line a cupcake pan with liners.
  2. In a large bowl, whisk together the flour, sugar, cocoa powder, baking powder, baking soda, and salt.
  3. In another bowl, mix the oil, vanilla extract, almond milk, and apple cider vinegar.
  4. Combine the wet and dry ingredients, stirring until just combined.
  5. Fill the cupcake liners about 2/3 full with batter.
  6. Bake for 20-25 minutes or until a toothpick comes out clean.
  7. Allow to cool before frosting.

Notes

  • For best results, let the cupcakes cool completely before adding frosting.
  • You can add vegan chocolate chips to the batter for extra richness.
