- 1 cup granulated sugar
- 1/2 cup water
- 8 ounces semisweet chocolate chips
- 1 tablespoon coconut oil
Instructions
- Rinse the cranberries and remove any stems or damaged berries.
- In a medium saucepan, combine cranberries, sugar, and water. Bring to a boil over medium heat, then simmer for 10 minutes until the cranberries burst.
- Remove from heat and let cool slightly.
- In a microwave-safe bowl, combine chocolate chips and coconut oil. Microwave in 30-second intervals, stirring until smooth.
- Dip each cranberry in the melted chocolate, then place on a parchment-lined baking sheet.
- Refrigerate until the chocolate is set.
