- 2 pounds potatoes, peeled and cubed
- 1 cup all-purpose flour
- 1 egg
- 1 teaspoon salt
- ¼ teaspoon black pepper
- ½ cup sour cream for serving
Instructions
- Boil the potatoes in a large pot of salted water until tender, about 15 minutes. Drain and mash.
- In a bowl, mix the mashed potatoes with flour, egg, salt, and pepper until a dough forms.
- Fill a pot with salted water and bring to a boil.
- Take a small piece of dough, flatten it, and add a small spoonful of mashed potato filling if desired. Fold and seal the dumpling.
- Carefully drop dumplings into boiling water and cook until they float, about 5 to 7 minutes.
- Remove with a slotted spoon and serve with sour cream.
Notes
- For a richer flavor, add sautéed onions or fried bacon bits to the filling.
- Make sure not to overwork the dough to keep the dumplings light.
