A traditional Ukrainian dish, these potato dumplings are known for their tender texture and delicious flavor.

Ingredients

  • 2 pounds potatoes, peeled and cubed
  • 1 cup all-purpose flour
  • 1 egg
  • 1 teaspoon salt
  • ¼ teaspoon black pepper
  • ½ cup sour cream for serving

Instructions

  1. Boil the potatoes in a large pot of salted water until tender, about 15 minutes. Drain and mash.
  2. In a bowl, mix the mashed potatoes with flour, egg, salt, and pepper until a dough forms.
  3. Fill a pot with salted water and bring to a boil.
  4. Take a small piece of dough, flatten it, and add a small spoonful of mashed potato filling if desired. Fold and seal the dumpling.
  5. Carefully drop dumplings into boiling water and cook until they float, about 5 to 7 minutes.
  6. Remove with a slotted spoon and serve with sour cream.

Notes

  • For a richer flavor, add sautéed onions or fried bacon bits to the filling.
  • Make sure not to overwork the dough to keep the dumplings light.
