- 2 cups semolina
- 1 cup granulated sugar
- 1 cup plain yogurt
- 1/2 cup vegetable oil
- 4 large eggs
- 1 teaspoon baking powder
- 1/2 teaspoon baking soda

- 1/4 cup hot water
- 1/2 cup finely chopped pistachios (plus extra for garnish)
- 1 teaspoon vanilla extract
- For the syrup:
- 1 cup granulated sugar
- 1/2 cup water
- 1 tablespoon lemon juice
- 1/4 teaspoon saffron threads
Instructions
- Preheat the oven to 350°F (175°C) and grease a 9×13-inch baking dish.
- In a small bowl, steep the saffron threads in hot water for about 10 minutes.
- In a large mixing bowl, whisk together the semolina, sugar, yogurt, vegetable oil, eggs, baking powder, baking soda, salt, and vanilla extract until well combined.
- Stir in the saffron water and chopped pistachios.
- Pour the batter into the prepared baking dish and smooth the top with a spatula.
- Bake for 30-35 minutes, or until the top is golden brown and a toothpick inserted in the center comes out clean.
- While the cake is baking, prepare the syrup by combining sugar, water, lemon juice, and saffron threads in a small saucepan.
- Bring the syrup mixture to a boil over medium heat, then reduce to a simmer for about 10 minutes until slightly thickened. Remove from heat and let cool.
- Once the cake is done baking, remove it from the oven and immediately pour the cooled syrup evenly over the hot cake.
- Allow the cake to absorb the syrup for at least 30 minutes before slicing.
- Serve warm or at room temperature, garnished with additional chopped pistachios.
Notes
- For a richer flavor, try adding a teaspoon of orange blossom water to the syrup.
- You can substitute almonds for pistachios for a different nutty taste.
