- 2 pounds pig trotters
- 1 large onion, chopped
- 2 carrots, chopped
- 3 celery stalks, chopped
- 4 garlic cloves, smashed
- 1 bay leaf
- 1 teaspoon thyme
- 10 cups water
- Salt to taste
Instructions
- Place all ingredients in a large stockpot.
- Cover with water and bring to a simmer.
- Skim any foam that rises to the surface.
- Simmer gently for 4 to 6 hours.
- Strain the broth through a fine-mesh sieve.
- Discard solids and let the broth cool.
Notes
- For a richer flavor, roast the trotters before adding them to the pot.
- This broth can be made ahead of time and frozen for later use.
