- 1 can chickpeas, drained and rinsed
- 1 tablespoon vegetable oil
- 1 onion, chopped
- 2 garlic cloves, minced
- 1 tablespoon curry powder
- 1/2 teaspoon turmeric
- 1/2 teaspoon cumin
- 1/2 teaspoon salt
- 1/2 cup coconut milk
- 1 tablespoon lime juice
- 4 slices of bread
- 1 tomato, sliced
- 1 cucumber, sliced
- 1/4 cup fresh cilantro, chopped
Instructions
- Heat vegetable oil in a pan over medium heat.
- Add onion and garlic, sauté until softened.
- Stir in curry powder, turmeric, cumin, and salt, cooking for 1 minute.
- Add chickpeas and coconut milk, simmer for 10 minutes.
- Stir in lime juice and cilantro.
- Toast the bread slices.
- Assemble the sandwiches with chickpea mixture, tomato, and cucumber.
- Serve warm.
Notes
- For a spicier version, add chopped chili peppers.
- Great served with a side salad.
