A delicious and flavorful Caribbean-inspired sandwich featuring curried chickpeas.

Ingredients

  • 1 can chickpeas, drained and rinsed
  • 1 tablespoon vegetable oil
  • 1 onion, chopped
  • 2 garlic cloves, minced
  • 1 tablespoon curry powder
  • 1/2 teaspoon turmeric
  • 1/2 teaspoon cumin
  • 1/2 teaspoon salt
  • 1/2 cup coconut milk
  • 1 tablespoon lime juice
  • 4 slices of bread
  • 1 tomato, sliced
  • 1 cucumber, sliced
  • 1/4 cup fresh cilantro, chopped

Instructions

  1. Heat vegetable oil in a pan over medium heat.
  2. Add onion and garlic, sauté until softened.
  3. Stir in curry powder, turmeric, cumin, and salt, cooking for 1 minute.
  4. Add chickpeas and coconut milk, simmer for 10 minutes.
  5. Stir in lime juice and cilantro.
  6. Toast the bread slices.
  7. Assemble the sandwiches with chickpea mixture, tomato, and cucumber.
  8. Serve warm.

Notes

  • For a spicier version, add chopped chili peppers.
  • Great served with a side salad.
