- 1 sheet of puff pastry
- 3 large tomatoes, sliced
- 2 tablespoons Dijon mustard
- 1 teaspoon dried Provençal herbs
- 1 egg, beaten
- 1 tablespoon of olive oil
- Salt and pepper to taste
Instructions
- Preheat the oven to 400°F (200°C).
- Roll out the puff pastry and fit it into a tart pan.
- Spread Dijon mustard over the base of the pastry.
- Layer sliced tomatoes on top of the mustard.
- Sprinkle with Provençal herbs, salt, and pepper.
- Brush edges of the pastry with beaten egg.
- Drizzle olive oil over the tart.
- Bake for 25-30 minutes, or until the pastry is golden brown.
- Allow to cool slightly before serving.

- Serve with a fresh salad for a light meal.
- This tart can be enjoyed warm or at room temperature.
