A flavorful tart with a blend of tomatoes, mustard, and Provençal herbs.

Ingredients

  • 1 sheet of puff pastry
  • 3 large tomatoes, sliced
  • 2 tablespoons Dijon mustard
  • 1 teaspoon dried Provençal herbs
  • 1 egg, beaten
  • 1 tablespoon of olive oil
  • Salt and pepper to taste

Instructions

  1. Preheat the oven to 400°F (200°C).
  2. Roll out the puff pastry and fit it into a tart pan.
  3. Spread Dijon mustard over the base of the pastry.
  4. Layer sliced tomatoes on top of the mustard.
  5. Sprinkle with Provençal herbs, salt, and pepper.
  6. Brush edges of the pastry with beaten egg.
  7. Drizzle olive oil over the tart.
  8. Bake for 25-30 minutes, or until the pastry is golden brown.
  9. Allow to cool slightly before serving.
