- 2 cups cooked lobster meat, chopped
- 1 cup diced potatoes
- 1 cup diced carrots
- 1 cup frozen peas
- 1/2 cup diced onion
- 2 cloves garlic, minced
- 1/4 cup butter
- 1/4 cup all-purpose flour
- 2 cups seafood broth
- 1 cup heavy cream
- 1 tablespoon lemon juice
- 1 teaspoon Old Bay seasoning
- 1 pie crust
- Salt and Pepper to taste
Instructions
- Preheat the oven to 425°F (220°C).
- In a large pot, melt the butter over medium heat. Add the onions and garlic, and cook until softened.
- Stir in the flour and cook for about 1 minute, then slowly whisk in the seafood broth and heavy cream.
- Add the lobster meat, potatoes, carrots, peas, lemon juice, Old Bay seasoning, salt, and pepper, and cook until the vegetables are tender.
- Pour the filling into a pie dish and cover with the pie crust, sealing the edges.
- Cut slits in the top crust to allow steam to escape.
- Bake for 30-35 minutes or until the crust is golden brown.
- Let cool for a few minutes before serving.

- For an extra flavor boost, consider adding fresh herbs such as thyme or parsley.
- This recipe can be made with other shellfish, such as shrimp or crab, as a substitute.
