  • 2 cups cooked lobster meat, chopped
  • 1 cup diced potatoes
  • 1 cup diced carrots
  • 1 cup frozen peas
  • 1/2 cup diced onion
  • 2 cloves garlic, minced
  • 1/4 cup butter
  • 1/4 cup all-purpose flour
  • 2 cups seafood broth
  • 1 cup heavy cream
  • 1 tablespoon lemon juice
  • 1 teaspoon Old Bay seasoning
  • 1 pie crust
  • Salt and Pepper to taste

Instructions

  1. Preheat the oven to 425°F (220°C).
  2. In a large pot, melt the butter over medium heat. Add the onions and garlic, and cook until softened.
  3. Stir in the flour and cook for about 1 minute, then slowly whisk in the seafood broth and heavy cream.
  4. Add the lobster meat, potatoes, carrots, peas, lemon juice, Old Bay seasoning, salt, and pepper, and cook until the vegetables are tender.
  5. Pour the filling into a pie dish and cover with the pie crust, sealing the edges.
  6. Cut slits in the top crust to allow steam to escape.
  7. Bake for 30-35 minutes or until the crust is golden brown.
  8. Let cool for a few minutes before serving.
