Ingredients

  • 1 cup dried chickpeas
  • 4 cups water
  • 1 onion, chopped
  • 2 cloves garlic, minced
  • 1 teaspoon ground cumin
  • 1/2 teaspoon paprika
  • 2 cups plain yogurt
  • 1/4 cup fresh parsley, chopped
  • Salt to taste
  • 1/4 cup olive oil

Instructions

  1. Soak chickpeas in water overnight.
  2. Drain and rinse the chickpeas. In a pot, combine chickpeas, fresh water, onion, garlic, cumin, and paprika. Bring to a boil and simmer until chickpeas are tender.
  3. Preheat the oven to 375°F (190°C).
  4. In a baking dish, layer the cooked chickpeas with yogurt and sprinkle parsley on top.
  5. Drizzle with olive oil and season with salt.
  6. Bake for 30 minutes or until the top is golden.

Notes

  • For a richer flavor, you can add spices like cinnamon or nutmeg.
