- 1 cup dried chickpeas
- 4 cups water
- 1 onion, chopped
- 2 cloves garlic, minced
- 1 teaspoon ground cumin
- 1/2 teaspoon paprika
- 2 cups plain yogurt
- 1/4 cup fresh parsley, chopped
- Salt to taste
- 1/4 cup olive oil
Instructions
- Soak chickpeas in water overnight.
- Drain and rinse the chickpeas. In a pot, combine chickpeas, fresh water, onion, garlic, cumin, and paprika. Bring to a boil and simmer until chickpeas are tender.
- Preheat the oven to 375°F (190°C).
- In a baking dish, layer the cooked chickpeas with yogurt and sprinkle parsley on top.
- Drizzle with olive oil and season with salt.
- Bake for 30 minutes or until the top is golden.
Notes
- For a richer flavor, you can add spices like cinnamon or nutmeg.
- Serve warm with pita bread or rice.
