- 1 cup all-purpose flour
- 1 cup granulated sugar
- 1/2 cup unsweetened cocoa powder
- 1/2 cup unsalted butter, melted
- 2 large eggs
- 1 tablespoon red food coloring
- 1 teaspoon vanilla extract
- 1/2 teaspoon baking soda
- 1/4 teaspoon salt
- 1/2 cup white chocolate chips (optional)
Instructions
- Preheat the oven to 350°F (175°C) and grease a mini muffin tin.
- In a mixing bowl, combine the melted butter and sugar, and stir until well blended.
- Add the eggs, food coloring, and vanilla extract, and mix until smooth.
- In a separate bowl, whisk together the flour, cocoa powder, baking soda, and salt.
- Gradually add the dry ingredients to the wet mixture and stir until just combined.
- If using, fold in the white chocolate chips.
- Fill each muffin cup about 2/3 full with the brownie batter.
- Bake for 10-12 minutes or until a toothpick inserted comes out clean.
- Let cool before serving.
Notes
- For a fudgier texture, underbake slightly.
- These can be decorated with cream cheese frosting on top.
