Ingredients

  • 1 cup all-purpose flour
  • 1 cup granulated sugar
  • 1/2 cup unsweetened cocoa powder
  • 1/2 cup unsalted butter, melted
  • 2 large eggs
  • 1 tablespoon red food coloring
  • 1 teaspoon vanilla extract
  • 1/2 teaspoon baking soda
  • 1/4 teaspoon salt
  • 1/2 cup white chocolate chips (optional)

Instructions

  1. Preheat the oven to 350°F (175°C) and grease a mini muffin tin.
  2. In a mixing bowl, combine the melted butter and sugar, and stir until well blended.
  3. Add the eggs, food coloring, and vanilla extract, and mix until smooth.
  4. In a separate bowl, whisk together the flour, cocoa powder, baking soda, and salt.
  5. Gradually add the dry ingredients to the wet mixture and stir until just combined.
  6. If using, fold in the white chocolate chips.
  7. Fill each muffin cup about 2/3 full with the brownie batter.
  8. Bake for 10-12 minutes or until a toothpick inserted comes out clean.
  9. Let cool before serving.

Notes

  • For a fudgier texture, underbake slightly.
  • These can be decorated with cream cheese frosting on top.
