- 4 cups sweet potatoes, peeled and cubed
- 1/2 cup sugar
- 1/2 cup milk
- 1/4 cup butter, melted
- 1 teaspoon vanilla extract
- 2 cups mini marshmallows
Instructions
- Preheat the oven to 350°F (175°C).
- Boil sweet potatoes in a large pot until tender, about 15-20 minutes. Drain.
- In a bowl, mash the sweet potatoes. Stir in sugar, milk, butter, and vanilla until smooth.
- Transfer the mixture to a greased baking dish.
- Top with mini marshmallows.
- Bake in the oven for 25-30 minutes, or until marshmallows are golden brown.
Notes
- For a crunchier topping, broil the marshmallows for a minute or two after baking.
- This dish can be prepared ahead and baked right before serving.
