Savory Sweet Potato and Zesty Sausage Bake

Ingredients

  • 2 large sweet potatoes, peeled and thinly sliced (approximately 4 cups)
  • 1 pound spicy Italian sausage, removed from casings
  • 1 medium onion, chopped
  • 2 cloves garlic, minced
  • 1 cup heavy cream
  • 1 cup shredded sharp cheddar cheese
  • 1 teaspoon smoked paprika
  • 1 teaspoon salt
  • ½ teaspoon black pepper
  • ½ teaspoon red pepper flakes (optional for an extra kick)
  • 1 tablespoon olive oil
  • Fresh parsley, chopped (for garnish)

Instructions

  1. Preheat your oven to 375°F.
  2. In a large skillet, warm the olive oil over medium heat. Add the chopped onion and sauté until soft and translucent, about 5 minutes.
  3. Add the minced garlic and cook for another minute until fragrant.
  4. Introduce the spicy sausage to the skillet, breaking it up as it cooks. Brown thoroughly for about 7-10 minutes, draining excess fat if necessary.
  5. In a separate bowl, whisk together the heavy cream, smoked paprika, salt, black pepper, and red pepper flakes (if using). Fold in the cooked sausage mixture.
  6. Grease a 9×13-inch baking dish and layer half of the sweet potato slices evenly across the bottom.
  7. Pour half of the creamy sausage mixture over the sweet potatoes. Repeat with the remaining sweet potatoes and sausage mixture.
  8. Cover the dish with aluminum foil and bake for 30 minutes.
  9. Remove the foil and sprinkle the shredded cheddar cheese on top. Bake uncovered for an additional 20-25 minutes, until sweet potatoes are tender and cheese is melted and golden brown.
  10. Allow the gratin to rest for 5-10 minutes before serving. Garnish with fresh parsley.
