Delicious sweet potato and black bean nachos topped with fresh green chile salsa.

Ingredients

  • 2 cups sweet potatoes, diced
  • 1 can black beans, drained and rinsed
  • 2 cups tortilla chips
  • 1 cup shredded cheese
  • 1/2 cup green onions, sliced
  • 1/2 cup green chiles, diced
  • 1 avocado, sliced
  • 1/4 cup cilantro, chopped
  • 1 lime, juiced

Instructions

  1. Preheat the oven to 400°F (200°C).
  2. In a bowl, toss sweet potatoes with olive oil and season to taste.
  3. Spread sweet potatoes on a baking sheet and roast for 20 minutes.
  4. Layer tortilla chips on a baking sheet.
  5. Add roasted sweet potatoes, black beans, and cheese on top of the chips.
  6. Bake until cheese is melted, about 10 minutes.
  7. Top with green onions, green chiles, avocado, and cilantro.
  8. Finish with a squeeze of lime juice.
  9. Serve immediately.
