- 2 cups sweet potatoes, diced
- 1 can black beans, drained and rinsed
- 2 cups tortilla chips
- 1 cup shredded cheese
- 1/2 cup green onions, sliced
- 1/2 cup green chiles, diced
- 1 avocado, sliced
- 1/4 cup cilantro, chopped
- 1 lime, juiced
Instructions
- Preheat the oven to 400°F (200°C).
- In a bowl, toss sweet potatoes with olive oil and season to taste.
- Spread sweet potatoes on a baking sheet and roast for 20 minutes.
- Layer tortilla chips on a baking sheet.
- Add roasted sweet potatoes, black beans, and cheese on top of the chips.
- Bake until cheese is melted, about 10 minutes.
- Top with green onions, green chiles, avocado, and cilantro.
- Finish with a squeeze of lime juice.
- Serve immediately.
