Ingredients

  • 2 cups chopped roti
  • 1 tablespoon oil
  • 1 onion, sliced
  • 1 green chili, sliced
  • 2 cloves garlic, minced
  • 1 teaspoon mustard seeds
  • 1 teaspoon curry powder
  • 1 cup mixed vegetables (carrots, peas, bell pepper)
  • 2 tablespoons soy sauce
  • 2 tablespoons chopped cilantro

Instructions

  1. Heat oil in a pan and add mustard seeds. Cook until they start to pop.
  2. Add sliced onion, green chili, and minced garlic; sauté until onions are translucent.
  3. Stir in curry powder and cook for another minute.
  4. Add mixed vegetables and cook until tender.
  5. Mix in chopped roti and soy sauce; stir well to combine.
  6. Cook for 3-5 minutes until everything is heated through.
  7. Garnish with chopped cilantro before serving.

  • Adjust the spice level by using more or fewer green chilies.
