Ingredients

- 2 cups chopped roti
- 1 tablespoon oil
- 1 onion, sliced
- 1 green chili, sliced
- 2 cloves garlic, minced
- 1 teaspoon mustard seeds
- 1 teaspoon curry powder
- 1 cup mixed vegetables (carrots, peas, bell pepper)
- 2 tablespoons soy sauce
- 2 tablespoons chopped cilantro
Instructions
- Heat oil in a pan and add mustard seeds. Cook until they start to pop.
- Add sliced onion, green chili, and minced garlic; sauté until onions are translucent.
- Stir in curry powder and cook for another minute.
- Add mixed vegetables and cook until tender.
- Mix in chopped roti and soy sauce; stir well to combine.
- Cook for 3-5 minutes until everything is heated through.
- Garnish with chopped cilantro before serving.
Notes
- Adjust the spice level by using more or fewer green chilies.
- This is a great way to use leftover roti.
- Feel free to customize the vegetables used based on your preference.
