Ingredients

- 2 pounds beef tenderloin
- 1 tablespoon olive oil
- 1 teaspoon salt
- 1/2 teaspoon black pepper
- 1 cup cranberry sauce
- 1/2 cup chopped mushrooms
- 1 sheet of puff pastry
- 1 egg (beaten)
Instructions
- Preheat oven to 400°F (200°C).
- Season beef with salt and pepper, and sear in olive oil until browned.
- Let beef cool, then spread cranberry sauce over it.
- Saute mushrooms until golden, then add on top of cranberry sauce.
- Wrap beef in puff pastry, sealing edges, and brush with beaten egg.
- Bake for 25-30 minutes until pastry is golden and meat is cooked to desired doneness.
- Let rest before slicing and serve.

- Can substitute wild mushrooms for a richer flavor.
