A festive twist on classic Beef Wellington, featuring spiced cranberry sauce for a burst of flavor.

Ingredients

  • 2 pounds beef tenderloin
  • 1 tablespoon olive oil
  • 1 teaspoon salt
  • 1/2 teaspoon black pepper
  • 1 cup cranberry sauce
  • 1/2 cup chopped mushrooms
  • 1 sheet of puff pastry
  • 1 egg (beaten)

Instructions

  1. Preheat oven to 400°F (200°C).
  2. Season beef with salt and pepper, and sear in olive oil until browned.
  3. Let beef cool, then spread cranberry sauce over it.
  4. Saute mushrooms until golden, then add on top of cranberry sauce.
  5. Wrap beef in puff pastry, sealing edges, and brush with beaten egg.
  6. Bake for 25-30 minutes until pastry is golden and meat is cooked to desired doneness.
  7. Let rest before slicing and serve.
