- 3 ripe bananas, mashed
- 1/2 cup unsalted butter, melted
- 1 cup sugar
- 2 eggs
- 1 teaspoon vanilla extract
- 1 teaspoon baking soda
- 1/2 teaspoon salt
- 1 teaspoon ground cinnamon
- 1/2 teaspoon ground nutmeg
- 1/2 teaspoon ground cloves
- 1 1/2 cups all-purpose flour
- 1/2 cup chopped walnuts or pecans (optional)
Instructions
- Preheat the oven to 350°F (175°C) and grease a loaf pan.
- In a large bowl, mix the mashed bananas and melted butter.
- Add the sugar, eggs, and vanilla, and mix until well combined.
- Stir in the baking soda, salt, cinnamon, nutmeg, and cloves.
- Gradually add in the flour and mix until just incorporated.
- Fold in nuts if using.
- Pour the batter into the prepared loaf pan.
- Bake for 60-65 minutes or until a toothpick inserted in the center comes out clean.
- Let cool in the pan for 10 minutes, then remove from the pan and cool completely on a wire rack.
Notes
- For extra flavor, add a splash of rum or bourbon to the batter.
- This bread freezes well, so you can make it ahead of time.
- Serve warm with butter for a special treat.
