Instructions
- In a large bowl, mix the grated carrots, sugar, and salt. Let it sit for 10 minutes to release moisture.
- In another bowl, whisk together the heavy cream, milk, vanilla, and spices.
- Combine the carrot mixture with the cream mixture, stirring well.
- Pour the mixture into an ice cream maker and churn according to the manufacturer’s instructions.
- Transfer the churned ice cream to an airtight container and freeze for at least 4 hours.

- For a creamier texture, fold in some whipped cream before freezing.
- Serve with a sprinkle of cinnamon on top for extra flavor.
