A delicious South African-inspired dish featuring bell peppers stuffed with a flavorful bobotie mixture.

Ingredients

  • 1 pound ground beef or lamb
  • 1 medium onion, finely chopped
  • 2 cloves garlic, minced
  • 1 tablespoon curry powder
  • 1 teaspoon ground turmeric
  • 1 teaspoon ground cinnamon
  • 1 tablespoon brown sugar
  • 1 tablespoon Worcestershire sauce
  • 1 cup bread crumbs
  • 1 cup milk
  • 2 large eggs
  • Salt and pepper to taste
  • 4 large bell peppers (any color)
  • 1/4 cup raisins or sultanas
  • 1/4 cup slivered almonds (optional)
  • Fresh cilantro or parsley for garnish

Instructions

  1. Preheat your oven to 375°F.
  2. In a large skillet, warm a drizzle of oil over medium heat and sauté the finely chopped onion until soft and translucent, about 5 minutes.
  3. Add the minced garlic and cook for an additional minute until aromatic.
  4. Introduce the ground beef or lamb, breaking it apart and cooking until browned, approximately 5-7 minutes. Drain excess fat.
  5. Incorporate curry powder, turmeric, cinnamon, brown sugar, Worcestershire sauce, and season with salt and pepper. Cook for another 2 minutes.
  6. Remove from heat and fold in bread crumbs and raisins, letting the mixture cool.
  7. In a separate bowl, whisk together milk and eggs until combined. Stir half into the meat blend.
  8. Prepare the bell peppers by cutting off their tops and removing seeds, then place them upright in a baking dish.
  9. Fill each bell pepper with the meat mixture, pressing down gently.
  10. Drizzle the remaining milk and egg mixture over the stuffed peppers and sprinkle slivered almonds on top if desired.
  11. Cover with aluminum foil and bake for 30 minutes.
  12. Remove the foil and bake for an additional 15 minutes, or until peppers are tender and tops are golden.
  13. Garnish with fresh cilantro or parsley before serving.

Notes

  • Serves 4.
  • Feel free to use any color bell peppers.
  • Slivered almonds are optional but add a nice crunch.
