Ingredients

  • 1 smoked tongue
  • 8 cups beef broth
  • 2 onions, quartered
  • 3 carrots, chopped
  • 2 celery stalks, chopped
  • 4 garlic cloves, smashed
  • 1 bay leaf
  • 1 teaspoon black peppercorns
  • 1 tablespoon fresh thyme
  • salt to taste

Instructions

  1. In a large pot, combine beef broth, smoked tongue, onions, carrots, celery, garlic, bay leaf, peppercorns, and thyme.
  2. Bring to a boil, then reduce heat and simmer for 2 hours.
  3. Remove the smoked tongue and let it cool before slicing.
  4. Strain the broth and return to the pot. Adjust seasoning with salt as needed.
  5. Add sliced tongue back into the broth and serve hot.
