- 1 smoked duck carcass
- 2 onions, halved
- 3 carrots, chopped
- 3 celery stalks, chopped
- 4 garlic cloves, smashed
- 1 bay leaf
- 5 sprigs fresh thyme
- 10 whole peppercorns
- 12 cups water
Instructions
- Combine all ingredients in a large pot.
- Bring to a boil over high heat, then reduce to a simmer.
- Cook for about 2 hours, skimming off any foam that forms.
- Strain the broth through a fine mesh sieve to remove solids.
- Allow to cool, then refrigerate or freeze for later use.
