Ingredients

- 2 pounds beef shank
 - 4 cups bone broth
 - 2 carrots, chopped
 - 1 onion, chopped
 - 2 celery stalks, chopped
 - 4 cloves garlic, minced
 - 1 tablespoon fresh thyme
 - 1 tablespoon salt
 - 1 teaspoon black pepper
 
Instructions
- In a large slow cooker, place the beef shank at the bottom.
 - Add bone broth, carrots, onion, celery, garlic, thyme, salt, and pepper.
 - Cover and cook on low for 8-10 hours or until the meat is tender.
 - Once done, remove the beef shank, shred the meat, and return to the broth.
 - Serve hot, garnished with fresh herbs if desired.
 
Notes
- For added flavor, you can roast the beef shank briefly before slow cooking.
 - Feel free to add other vegetables such as potatoes or parsnips.
