Ingredients

- 2 cucumbers, diced

- 1 green apple, chopped
- 1/4 cup red onion, finely chopped
- 1/4 cup fresh parsley, chopped
- 3 tablespoons olive oil
- 1 tablespoon apple cider vinegar
- Salt and pepper to taste
Instructions
- In a large bowl, combine the cucumbers, celery, green apple, red onion, and parsley.
- In a small bowl, whisk together the olive oil, apple cider vinegar, salt, and pepper.
- Pour the dressing over the salad and toss to combine.
- Chill in the refrigerator for at least 30 minutes before serving.
Notes
- This salad can be made a few hours in advance for the flavors to meld.
- Feel free to add nuts for an extra crunch.
