- 2 cups milk
- 3 large eggs
- 1/4 cup butter, melted
- 1/2 teaspoon salt
- 1/2 teaspoon pepper
- 1 cup shrimp, cooked and chopped
- 1 cup crab meat, cooked
- 1 cup cheese, shredded (e.g., Gruyère or mozzarella)
Instructions
- In a bowl, whisk together flour, milk, eggs, melted butter, salt, and pepper until smooth.
- Heat a non-stick skillet over medium heat and pour in a small amount of batter, swirling to coat the bottom.
- Cook until edges lift, then flip and cook until golden.
- Repeat with remaining batter and set crepes aside.
- In a saucepan, prepare béchamel sauce by melting butter, whisking in flour, and gradually adding milk.
- Stir until thickened, then add shrimp, crab, and half the cheese. Mix well.
- Fill each crepe with the seafood mixture, fold, and place in a baking dish.
- Top with remaining cheese and bake at 350°F (175°C) for 20 minutes.
- Serve hot and enjoy!

- For a lighter version, use low-fat milk.
