  • 1 cup all-purpose flour
  • 2 cups milk
  • 3 large eggs
  • 1/4 cup butter, melted
  • 1/2 teaspoon salt
  • 1/2 teaspoon pepper
  • 1 cup shrimp, cooked and chopped
  • 1 cup crab meat, cooked
  • 1 cup cheese, shredded (e.g., Gruyère or mozzarella)

Instructions

  1. In a bowl, whisk together flour, milk, eggs, melted butter, salt, and pepper until smooth.
  2. Heat a non-stick skillet over medium heat and pour in a small amount of batter, swirling to coat the bottom.
  3. Cook until edges lift, then flip and cook until golden.
  4. Repeat with remaining batter and set crepes aside.
  5. In a saucepan, prepare béchamel sauce by melting butter, whisking in flour, and gradually adding milk.
  6. Stir until thickened, then add shrimp, crab, and half the cheese. Mix well.
  7. Fill each crepe with the seafood mixture, fold, and place in a baking dish.
  8. Top with remaining cheese and bake at 350°F (175°C) for 20 minutes.
  9. Serve hot and enjoy!
