Ingredients

  • 1 pound fresh salmon fillet
  • 2 cups fresh spinach
  • 1 tablespoon olive oil
  • 1 small onion, diced
  • 2 cloves garlic, minced
  • 1/2 teaspoon salt
  • 1/4 teaspoon black pepper
  • 1 package puff pastry (2 sheets)
  • 1 egg, beaten (for egg wash)

Instructions

  1. Preheat the oven to 375°F (190°C).
  2. Heat olive oil in a skillet over medium heat, add onions and garlic, sauté until soft.
  3. Add spinach and cook until wilted, then remove from heat.
  4. Place the salmon fillet and spinach mixture on one sheet of puff pastry.
  5. Cover with the second sheet of puff pastry, sealing the edges.
  6. Brush the top with beaten egg.
  7. Bake for 25-30 minutes until golden brown.
  8. Let cool for a few minutes before slicing and serving.

Notes

  • For extra flavor, add cream cheese to the spinach mixture.
