- 1 pound fresh salmon fillet
- 2 cups fresh spinach
- 1 tablespoon olive oil
- 1 small onion, diced
- 2 cloves garlic, minced
- 1/2 teaspoon salt
- 1/4 teaspoon black pepper
- 1 package puff pastry (2 sheets)
- 1 egg, beaten (for egg wash)
Instructions
- Preheat the oven to 375°F (190°C).
- Heat olive oil in a skillet over medium heat, add onions and garlic, sauté until soft.
- Add spinach and cook until wilted, then remove from heat.
- Place the salmon fillet and spinach mixture on one sheet of puff pastry.
- Cover with the second sheet of puff pastry, sealing the edges.
- Brush the top with beaten egg.
- Bake for 25-30 minutes until golden brown.
- Let cool for a few minutes before slicing and serving.
Notes
- For extra flavor, add cream cheese to the spinach mixture.
- Serve with a side salad for a complete meal.
