- 1 cup milk
- 1 large egg
- 2 tablespoons melted butter
- 1 cup diced ham
- 1 cup shredded cheddar cheese
- 1/4 cup chopped green onions (optional)
- Butter or oil for cooking
Instructions
- In a large mixing bowl, whisk together the flour, baking powder, and salt.
- In another bowl, combine the milk, egg, and melted butter. Mix well.
- Pour the wet ingredients into the dry ingredients and stir until just combined. Do not overmix; a few lumps are okay.
- Gently fold in the diced ham, shredded cheese, and green onions if using.
- Heat a non-stick skillet or griddle over medium heat and add a little butter or oil.
- Pour about 1/4 cup of batter onto the skillet for each pancake. Cook until bubbles form on the surface, about 2-3 minutes.
- Flip the pancakes and cook for another 2-3 minutes until golden brown and cooked through.
- Repeat with the remaining batter, adding more butter or oil to the skillet as needed.
- Serve warm with your favorite toppings, such as sour cream or additional green onions.
Notes
- For a spicier kick, add diced jalapeños or a pinch of cayenne pepper to the batter.
- Substitute the ham with cooked bacon or sausage for a different flavor profile.
