Ingredients

  • 1 cup shredded cheddar cheese
  • 1/4 cup chopped green onions (optional)
  • Butter or oil for cooking

Instructions

  1. In a large mixing bowl, whisk together the flour, baking powder, and salt.
  2. In another bowl, combine the milk, egg, and melted butter. Mix well.
  3. Pour the wet ingredients into the dry ingredients and stir until just combined. Do not overmix; a few lumps are okay.
  4. Gently fold in the diced ham, shredded cheese, and green onions if using.
  5. Heat a non-stick skillet or griddle over medium heat and add a little butter or oil.
  6. Pour about 1/4 cup of batter onto the skillet for each pancake. Cook until bubbles form on the surface, about 2-3 minutes.
  7. Flip the pancakes and cook for another 2-3 minutes until golden brown and cooked through.
  8. Repeat with the remaining batter, adding more butter or oil to the skillet as needed.
  9. Serve warm with your favorite toppings, such as sour cream or additional green onions.

Notes

  • For a spicier kick, add diced jalapeños or a pinch of cayenne pepper to the batter.
