- 2 cups fresh or frozen Saskatoon berries
- 1 cup granulated sugar
- 2 tablespoons cornstarch
- 1 tablespoon fresh lemon juice
- 1 teaspoon pure vanilla extract
- 1/4 teaspoon sea salt
- 1 tablespoon unsalted butter, cut into tiny cubes
- 1 pie crust (store-bought or homemade)
- 1 egg, beaten (for egg wash)
- 1 tablespoon milk (for egg wash)
Instructions
- Preheat your oven to 425°F (220°C).
- In a spacious bowl, mix together the Saskatoon berries, sugar, cornstarch, lemon juice, vanilla extract, and sea salt until the berries are evenly coated.
- Lay the pie crust into a 9-inch pie dish, trimming any excess dough for a neat finish.
- Spoon the berry mixture into the prepared crust, spreading it out evenly.
- Scatter the small butter cubes over the top of the filling.
- Roll out a second pie crust and place it over the berry filling, trimming and crimping the edges to seal the pie.
- Cut several slits in the top crust to allow steam to escape during baking.
- In a small bowl, whisk together the beaten egg and milk, then brush this mixture over the top crust.
- Place the pie in the preheated oven and bake for 15 minutes.
- Lower the temperature to 350°F (175°C) and continue baking for an additional 30-35 minutes, or until the filling is bubbling and the crust is golden brown.
- Remove the pie from the oven and allow it to cool for at least 2 hours before slicing.
Notes
- Cooling the pie helps the filling set perfectly for easier serving.
- This pie can be made with either fresh or frozen Saskatoon berries.
