  • 2 cups fresh or frozen Saskatoon berries
  • 1 cup granulated sugar
  • 2 tablespoons cornstarch
  • 1 tablespoon fresh lemon juice
  • 1 teaspoon pure vanilla extract
  • 1/4 teaspoon sea salt
  • 1 tablespoon unsalted butter, cut into tiny cubes
  • 1 pie crust (store-bought or homemade)
  • 1 egg, beaten (for egg wash)
  • 1 tablespoon milk (for egg wash)

Instructions

  1. Preheat your oven to 425°F (220°C).
  2. In a spacious bowl, mix together the Saskatoon berries, sugar, cornstarch, lemon juice, vanilla extract, and sea salt until the berries are evenly coated.
  3. Lay the pie crust into a 9-inch pie dish, trimming any excess dough for a neat finish.
  4. Spoon the berry mixture into the prepared crust, spreading it out evenly.
  5. Scatter the small butter cubes over the top of the filling.
  6. Roll out a second pie crust and place it over the berry filling, trimming and crimping the edges to seal the pie.
  7. Cut several slits in the top crust to allow steam to escape during baking.
  8. In a small bowl, whisk together the beaten egg and milk, then brush this mixture over the top crust.
  9. Place the pie in the preheated oven and bake for 15 minutes.
  10. Lower the temperature to 350°F (175°C) and continue baking for an additional 30-35 minutes, or until the filling is bubbling and the crust is golden brown.
  11. Remove the pie from the oven and allow it to cool for at least 2 hours before slicing.
