- 1 1/2 cups chocolate wafer cookies, crushed
- 1/2 cup unsalted butter, melted
- 1 cup granulated sugar
- 1/2 cup heavy cream
- 4 ounces dark chocolate, chopped
- 1/4 teaspoon sea salt
- 1 cup bittersweet chocolate chips
Instructions
- Preheat the oven to 350°F (175°C).
- In a bowl, combine crushed chocolate wafer cookies and melted butter. Press the mixture into a tart pan to form the crust.
- Bake the crust for 10 minutes, then let it cool.
- In a saucepan, combine sugar and 1/4 cup of water over medium heat. Stir until sugar dissolves.
- Increase the heat and boil until it turns a deep amber color, then remove from heat.
- Carefully stir in heavy cream and sea salt until smooth.
- Pour caramel over the cooled crust.
- In another saucepan, melt dark chocolate with a bit of heavy cream until smooth, then pour it over the caramel layer.
- Chill the tart in the refrigerator for at least 2 hours before serving.
Notes
- Allow the tart to cool completely before slicing.
- Store leftovers in the fridge for up to 3 days.
