- 1 whole duck
- 4 tablespoons fresh rosemary, chopped
- 6 cloves garlic, minced
- 2 tablespoons olive oil
- 1 teaspoon salt
- 1 teaspoon black pepper
- 1 cup chicken broth
- 2 oranges, quartered
Instructions
- Preheat your oven to 375°F (190°C).
- In a bowl, mix together the rosemary, garlic, olive oil, salt, and pepper.
- Rub the mixture all over the duck, including inside the cavity.
- Place the orange quarters inside the cavity of the duck.
- Place the duck on a rack in a roasting pan and pour the chicken broth into the bottom of the pan.
- Roast the duck in the preheated oven for about 2 hours, basting occasionally, until the skin is golden brown and crispy.
- Allow the duck to rest for 15 minutes before carving.
Notes
- For best results, ensure the duck is completely thawed if frozen.
- This dish pairs well with roasted vegetables or mashed potatoes.
