This succulent roasted duck is infused with the aromatic flavors of rosemary and garlic, creating a delightful dish for any special occasion.

Ingredients

  • 1 whole duck
  • 4 tablespoons fresh rosemary, chopped
  • 6 cloves garlic, minced
  • 2 tablespoons olive oil
  • 1 teaspoon salt
  • 1 teaspoon black pepper
  • 1 cup chicken broth
  • 2 oranges, quartered

Instructions

  1. Preheat your oven to 375°F (190°C).
  2. In a bowl, mix together the rosemary, garlic, olive oil, salt, and pepper.
  3. Rub the mixture all over the duck, including inside the cavity.
  4. Place the orange quarters inside the cavity of the duck.
  5. Place the duck on a rack in a roasting pan and pour the chicken broth into the bottom of the pan.
  6. Roast the duck in the preheated oven for about 2 hours, basting occasionally, until the skin is golden brown and crispy.
  7. Allow the duck to rest for 15 minutes before carving.

  • For best results, ensure the duck is completely thawed if frozen.
