Ingredients

  • 2 roasted red peppers, peeled and diced

  • 2 cloves garlic, minced
  • 1/4 teaspoon red pepper flakes
  • Salt and pepper to taste
  • Fresh basil for garnish

Instructions

  1. Cook the penne pasta according to package instructions; drain and set aside.
  2. In a large skillet, heat olive oil over medium heat. Add the garlic and sauté until fragrant.
  3. Add the roasted red peppers and cook for a few minutes.
  4. Stir in the heavy cream and bring to a simmer.
  5. Mix in the goat cheese and Parmesan until melted and smooth.
  6. Add the cooked penne to the skillet and toss to coat.
  7. Season with red pepper flakes, salt, and pepper.
  8. Serve hot, garnished with fresh basil.
