  • 1/2 cup duck fat
  • 2 sprigs fresh thyme
  • 2 sprigs fresh rosemary
  • 4 cloves garlic, smashed
  • Salt to taste
  • Pepper to taste

Instructions

  1. Preheat the oven to 400°F (200°C).
  2. In a large skillet, heat the duck fat over medium-high heat.
  3. Season the quail with salt and pepper, then brown them in the duck fat for about 3-4 minutes on each side.
  4. Transfer the quail to a roasting pan, adding thyme, rosemary, and garlic around them.
  5. Roast in the preheated oven for 15-20 minutes until the quail are cooked through.
  6. Rest the quail for a few minutes before serving.
