- 4 quail
- 1/2 cup duck fat
- 2 sprigs fresh thyme
- 2 sprigs fresh rosemary
- 4 cloves garlic, smashed
- Salt to taste
- Pepper to taste
Instructions
- Preheat the oven to 400°F (200°C).
- In a large skillet, heat the duck fat over medium-high heat.
- Season the quail with salt and pepper, then brown them in the duck fat for about 3-4 minutes on each side.
- Transfer the quail to a roasting pan, adding thyme, rosemary, and garlic around them.
- Roast in the preheated oven for 15-20 minutes until the quail are cooked through.
- Rest the quail for a few minutes before serving.
Notes
- Best served with a side of roasted vegetables.
- Can be paired with a light red wine.
