- 2 sprigs of thyme
- 2 cloves of garlic, minced
- Salt to taste
- Pepper to taste
Instructions
- Preheat the oven to 400°F (200°C).
- Rub the quails with duck fat, garlic, salt, and pepper.
- Stuff the quails with rosemary and thyme.
- Place the quails in a roasting pan.
- Roast in the oven for 25-30 minutes or until cooked through.
- Let rest for a few minutes before serving.
Notes
- For added flavor, marinate the quails in the duck fat and herbs for a few hours before roasting.
- Serve with seasonal vegetables or a salad.
