Instructions
- Preheat the oven to 400°F (200°C).
- Peel and chop the carrots into uniform pieces.

- Spread the carrots on a baking sheet and roast for 25-30 minutes until tender.
- Meanwhile, cook the quinoa according to package instructions.
- Once carrots are roasted, layer them with quinoa to form towers.
- Serve warm and enjoy!
