This Roasted Fennel & Pear Flatbread is a delightful combination of sweet pears and savory roasted fennel on a crisp flatbread.

Ingredients

  • 2 medium fennel bulbs, trimmed and sliced
  • 2 ripe pears, sliced
  • 1 tablespoon olive oil
  • 1 teaspoon salt
  • 1 teaspoon black pepper
  • 1 tablespoon fresh thyme, chopped
  • 1 package flatbread
  • 1 cup goat cheese, crumbled
  • 1 tablespoon balsamic glaze

Instructions

  1. Preheat the oven to 400°F (200°C).
  2. In a bowl, toss the fennel and pears with olive oil, salt, pepper, and thyme.
  3. Spread the mixture evenly on a baking sheet and roast for 20-25 minutes.
  4. Remove from the oven and let cool slightly.
  5. Place the flatbread on a baking tray and sprinkle with goat cheese.
  6. Top with the roasted fennel and pear mixture.
  7. Drizzle with balsamic glaze.
  8. Bake for an additional 10 minutes or until the flatbread is golden.
  9. Slice and serve warm.
