- 2 medium fennel bulbs, trimmed and sliced
- 2 ripe pears, sliced
- 1 tablespoon olive oil
- 1 teaspoon salt
- 1 teaspoon black pepper
- 1 tablespoon fresh thyme, chopped
- 1 package flatbread
- 1 cup goat cheese, crumbled
- 1 tablespoon balsamic glaze
Instructions
- Preheat the oven to 400°F (200°C).
- In a bowl, toss the fennel and pears with olive oil, salt, pepper, and thyme.
- Spread the mixture evenly on a baking sheet and roast for 20-25 minutes.
- Remove from the oven and let cool slightly.
- Place the flatbread on a baking tray and sprinkle with goat cheese.
- Top with the roasted fennel and pear mixture.
- Drizzle with balsamic glaze.
- Bake for an additional 10 minutes or until the flatbread is golden.
- Slice and serve warm.
Notes
- For extra flavor, consider adding some crushed red pepper flakes.
- Make sure to use ripe pears for the best sweetness.
